Mimi Fielding is the Food Technologist at Lucks. She has spent her career in the food industry, working with many different products, from soups to salads, fish, pickles and potato chips. Mimi's job is to bring foods from concept into the test lab and then scale up to production. The food product development includes the ingredients, the processing, the packaging, the quality control procedures and labeling.
Mimi started in 1996 as a consultant at Lucks and gradually took on more and more projects. She holds a B.S. in Food Science from the University of Washington.
